Mini Chicken Salad Sliders

Ingredients
  

2 cups cooked chicken, shredded (rotisserie chicken works great!)

1/2 cup celery, finely diced

1/2 cup red grapes, halved

1/4 cup red onion, finely chopped

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon fresh lemon juice

Salt and pepper to taste

12 mini slider buns

Fresh lettuce leaves for garnish

Optional: 1/4 cup slivered almonds for crunch

Instructions
 

Prep the Chicken Salad: In a large mixing bowl, combine the shredded chicken, diced celery, halved grapes, and chopped red onion.

    Make the Dressing: In a separate bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper until well combined.

      Combine Ingredients: Pour the dressing over the chicken mixture and stir gently until everything is evenly coated. Add slivered almonds if using for an extra crunch.

        Assemble Sliders: Cut the mini slider buns in half. Place a leaf of fresh lettuce on the bottom half of each bun, followed by a generous scoop of the chicken salad mixture.

          Top and Serve: Place the top half of the bun over the chicken salad. Arrange the sliders on a platter and serve immediately, or cover and refrigerate until ready to serve.

            Optional Garnish: If desired, garnish with additional grapes or celery leaves for a pop of color!
