2 large whole wheat pitas

1 cup cooked chicken breast, shredded

1 tablespoon shawarma spice blend (or a mix of cumin, paprika, turmeric, and garlic powder)

1 tablespoon olive oil

1/2 cup plain Greek yogurt

1 tablespoon tahini

1 tablespoon lemon juice

1/2 cucumber, thinly sliced

1 small tomato, diced

1/4 red onion, thinly sliced

1/2 cup shredded mozzarella cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: In a bowl, combine the shredded chicken, shawarma spice blend, olive oil, salt, and pepper. Toss until the chicken is evenly coated with the spices. Set aside.

    Make the Sauce: In a small bowl, mix the Greek yogurt, tahini, and lemon juice until smooth. Season with salt to taste. This will be your creamy sauce.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Assemble the Pita Pizzas: Place the whole wheat pitas on a baking sheet. Spread a generous layer of the creamy sauce over each pita. Top with the spiced chicken, followed by mozzarella cheese, diced tomatoes, cucumber slices, and red onion.

          Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.
