Ingredients

1 can of refrigerated croissant dough (8-count)

1 cup cooked chicken, shredded (can use rotisserie chicken)

1/2 cup taco seasoning (store-bought or homemade)

1/4 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup diced tomatoes (fresh or canned, drained)

1/4 cup finely chopped red onion

1/4 cup sliced black olives (optional)

1/4 cup fresh cilantro, chopped (for garnish)

1 jalapeño, sliced (optional for heat)

Sour cream and salsa (for serving)

Instructions

Preheat Your Oven: Preheat the oven to 375°F (190°C).

Prepare the Chicken Filling: In a medium bowl, mix together the shredded chicken, taco seasoning, cream cheese, shredded cheddar cheese, diced tomatoes, red onion, and black olives (if using). Stir until well combined.

Roll Out the Croissant Dough: Open the can of croissant dough and carefully unroll it. Separate the dough into triangles along the perforations.

Fill the Croissant Dough: Place a generous tablespoon of the chicken mixture at the wide end of each croissant triangle. For a mini bite, you can adjust the amount to suit your preference.

Shape the Bites: Starting at the wide end, roll up the triangle snugly towards the pointed end, enclosing the filling, and place each rolled croissant on a baking sheet lined with parchment paper.

Bake: Bake in the preheated oven for about 12-15 minutes, or until golden brown and puffed. Keep an eye on them to avoid burning.

Garnish and Serve: Once baked, remove from the oven and let cool for a few minutes. Top with fresh cilantro and jalapeño slices if you like a bit of heat. Serve warm with a side of sour cream and salsa for dipping.
