4 slices of bread (thick-cut works best)

4 large eggs

1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)

1/2 cup diced bell peppers (any color)

1/4 cup diced onion

1/4 teaspoon garlic powder

Salt and pepper to taste

Fresh herbs for garnish (optional, such as chives or parsley)

Butter for greasing muffin tin

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the muffin tin: Grease a standard muffin tin with butter to prevent sticking.

      Create the toast cups: Using a rolling pin, flatten each slice of bread slightly. Cut out circles slightly larger than the muffin cups (you can use a glass or cookie cutter). Press the circles into the greased muffin tin to form cups.

        Mix the filling: In a large mixing bowl, whisk together the eggs, garlic powder, salt, and pepper. Stir in the diced bell peppers, onions, and half of the shredded cheese.

          Fill the cups: Carefully pour the egg mixture into each bread cup, filling them about three-quarters of the way full. Sprinkle the remaining cheese on top.

            Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes or until the egg is set and the bread is golden brown.

              Cool and serve: Remove from the oven and let cool for a few minutes. Carefully lift the egg toast cups out of the muffin tin. Garnish with fresh herbs if desired and serve warm.
