1 cup cooked shredded chicken

1/2 cup basil pesto (store-bought or homemade)

1/2 cup cream cheese, softened

1/2 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 French baguette or crusty artisan bread, sliced into 1/2-inch pieces

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Balsamic glaze for drizzling (optional)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the toast slices: Arrange the baguette slices on the baking sheet. Brush each slice lightly with olive oil on both sides. Bake in the preheated oven for about 5-7 minutes, until the bread is golden and crisp.

      Make the chicken topping: In a mixing bowl, combine the shredded chicken, basil pesto, and softened cream cheese. Mix until well incorporated. Season with salt and pepper to taste.

        Assemble the toasts: Once the baguette slices are toasted and cooling slightly, spoon the pesto chicken mixture generously onto each slice.
