1 cup pancake mix

1 cup milk

1 large egg

1 teaspoon vanilla extract

1 cup breakfast sausage, crumbled

4 large eggs

1/4 cup shredded cheddar cheese

1/4 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or oil for waffle iron

Optional toppings: Salsa, avocado slices, chopped green onions, or hot sauce

Instructions
 

Make the Waffle Batter: In a medium bowl, mix together the pancake mix, milk, egg, and vanilla extract until just combined. Be careful not to overmix; some lumps are okay.

    Cook the Sausage: In a skillet over medium heat, cook the crumbled breakfast sausage until browned and fully cooked, about 5-7 minutes. Remove from heat and drain excess fat if necessary.

      Prepare the Waffle Iron: Preheat your waffle iron according to manufacturer instructions and lightly coat it with cooking spray or oil to prevent sticking.

        Cook the Waffles: Pour about 1/3 cup of the batter onto the preheated waffle iron and cook until golden brown (about 3-5 minutes depending on your waffle maker). Repeat this process until all the batter is used up. You should yield about 6-8 mini waffles.

          Scramble the Eggs: In a bowl, whisk together the 4 large eggs, shredded cheddar cheese, salt, and black pepper. In a non-stick skillet, scramble the egg mixture over medium-low heat until just set. Remove from heat.
