Ingredients
  

2 medium sweet potatoes

4 large eggs

1 cup chopped spinach

½ cup grated cheese (cheddar or feta works well)

1 small red bell pepper, diced

2 green onions, sliced

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

Olive oil for greasing the muffin tin

Optional: avocado slices for topping

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes:

      - Wash the sweet potatoes thoroughly and pierce them several times with a fork.

        - Microwave them for about 5-7 minutes until they are tender. Let them cool slightly, then peel and mash in a bowl.

          Mix the Base:

            - In the bowl with the mashed sweet potatoes, add the chopped spinach, diced red bell pepper, garlic powder, smoked paprika, salt, and pepper. Mix everything until well combined.

              Form the Nests:

                - Grease a muffin tin with olive oil.

                  - Take about 2-3 tablespoons of the sweet potato mixture and press it into the bottom and up the sides of each muffin cup to form a nest shape.

                    Bake the Nests:

                      - Place the muffin tin in the preheated oven and bake for 15 minutes, or until the edges of the nests are slightly crispy.

                        Add the Eggs and Cheese:

                          - Carefully remove the muffin tin from the oven.

                            - Crack one egg into each nest and sprinkle with grated cheese and green onions.

                              Final Bake:

                                - Return the tin to the oven and bake for an additional 10-12 minutes, or until the egg whites are set and the yolks are still runny (or cooked to your preference).

                                  Serve:

                                    - Let the nests cool for a couple of minutes before gently removing them from the tin.

                                      - Top with avocado slices if desired and enjoy your delightful breakfast!
