Ingredients

1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, freshly grated

1/4 cup teriyaki sauce (store-bought or homemade)

1 tablespoon soy sauce (low sodium recommended)

1 teaspoon sesame oil

1/2 cup water chestnuts, finely diced

1/4 cup green onions, chopped

1 teaspoon sesame seeds

1 head of butter lettuce or romaine lettuce, leaves separated

Optional toppings: sliced radishes, cilantro, or sliced jalapeños

Instructions

Prep Your Ingredients: Wash and separate the lettuce leaves carefully to use as wraps. Finely chop the onion, garlic, ginger, and water chestnuts. Chop the green onions and set aside.

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Add Flavorings: Stir in the minced garlic and ginger. Cook for an additional minute until fragrant but not browned.

Brown the Chicken: Add the ground chicken to the skillet. Using a spatula, break it apart and cook until it’s no longer pink, about 5-7 minutes.

Incorporate the Sauces: Pour in the teriyaki sauce, soy sauce, and sesame oil. Mix well to coat the chicken evenly. Stir in the diced water chestnuts for added crunch and let it simmer for 2-3 minutes.

Finish and Garnish: Remove the skillet from heat and stir in the chopped green onions and sesame seeds. Taste and adjust seasoning if needed.

Assemble the Wraps: To serve, spoon the chicken mixture into the center of each lettuce leaf. Top with optional toppings like sliced radishes, cilantro, or sliced jalapeños for an added pop of flavor.

Enjoy: Serve immediately while the filling is warm and fresh!
