Ingredients

2 medium zucchinis, sliced into 1/4-inch thick rounds

1 cup fresh bread crumbs (preferably from a crusty loaf)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped (plus extra for garnish)

1/2 teaspoon red pepper flakes (optional)

1/4 cup olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 pack of mini muffin tin (12-cup)

Instructions

Prepare the Zucchini: Preheat your oven to 400°F (200°C). Using a mandoline or a knife, slice the zucchinis into 1/4-inch thick rounds. Once sliced, place them in a clean kitchen towel and press gently to remove excess moisture.

Make the Garlic Bread Mixture: In a mixing bowl, combine the fresh bread crumbs, grated Parmesan cheese, minced garlic, chopped parsley, red pepper flakes (if using), olive oil, salt, and black pepper. Mix well to combine all ingredients into a cohesive mixture.

Assemble the Toast Cups: Lightly grease the mini muffin tin with cooking spray or olive oil. Place one zucchini slice in each muffin cup, ensuring it fits snugly. Press down gently to create a small cup effect.

Fill the Cups: Using a spoon, fill each zucchini cup with the garlic bread mixture, pressing down lightly to pack it in.

Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and crispy.

Garnish and Serve: Remove the muffin tin from the oven and let it cool for a few minutes. Carefully remove the mini zucchini toast cups using a small spoon or spatula. Garnish with extra chopped parsley before serving warm.
