2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1/4 teaspoon black pepper

1 large egg, beaten

1/2 cup shredded mozzarella cheese

1/2 cup marinara sauce (for topping)

Fresh basil leaves (for garnish)

Olive oil (for frying)

Instructions
 

Prepare the Zucchini: In a large bowl, combine the grated zucchinis with salt. Let them sit for about 10 minutes to draw out excess moisture. Then, using a clean kitchen towel, squeeze out the zucchini to remove as much liquid as possible. This will prevent the fritters from being soggy.

    Mix the Batter: In another bowl, mix together the flour, Parmesan cheese, garlic powder, oregano, and black pepper. Add the squeezed zucchini and the beaten egg. Mix until well combined. Finally, fold in the shredded mozzarella cheese.

      Form the Fritters: Heat a tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, drop about 2 tablespoons of the zucchini mixture onto the skillet, flattening them slightly to create mini fritters.

        Cook the Fritters: Cook the fritters for about 3-4 minutes on each side until golden brown and crispy. Remove them from the skillet and place them on a paper towel-lined plate to absorb excess oil. Repeat this process until all the mixture is cooked, adding more oil as necessary.

          Assemble the Stacks: On a plate, stack two fritters together. Spoon a small amount of marinara sauce on top of the first fritter, and then place the second fritter on top. Add another spoonful of marinara sauce on top and garnish with a fresh basil leaf.

            Serve: Repeat the stacking process with the remaining fritters. Serve immediately while warm with additional marinara sauce on the side for dipping.
