Mini Zucchini Ricotta Pizza Rolls

2 medium zucchinis, thinly sliced lengthwise

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup pizza sauce (store-bought or homemade)

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

1 tablespoon fresh basil, chopped (plus extra for garnish)

Salt and pepper, to taste

Olive oil, for drizzling

Cooking spray or parchment paper

Instructions
 

Prepare the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Zucchini: Using a mandoline or sharp knife, slice the zucchinis lengthwise into thin strips, about 1/8 inch thick. Place the strips in a colander, sprinkle with salt, and let them sit for about 15 minutes to draw out excess moisture. Rinse and pat dry with a paper towel.

      Make the Filling: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, dried oregano, garlic powder, red pepper flakes (if using), chopped basil, and a pinch of salt and pepper. Mix until well combined.

        Assemble the Rolls: Take a zucchini slice and spread about 1 tablespoon of the ricotta filling at one end. Roll the zucchini slice tightly to create a pinwheel. Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining zucchini slices and filling.

          Top with Sauce and Cheese: Once all rolls are assembled, spoon about 1 tablespoon of pizza sauce over each roll. Sprinkle the remaining mozzarella cheese on top of the sauce.

            Bake: Drizzle a little olive oil over the tops of the rolls for extra flavor and crispness. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the zucchini is tender.

              Garnish and Serve: Remove from the oven, allow to cool slightly, and garnish with additional fresh basil. Serve warm with extra pizza sauce on the side for dipping.
