2 cups all-purpose flour

1 cup granulated sugar

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 cup unsweetened applesauce

½ cup vegetable oil

3 large eggs

1 tsp vanilla extract

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

For the Crumble Topping:

¾ cup old-fashioned rolled oats

¾ cup all-purpose flour

½ cup brown sugar, packed

½ tsp cinnamon

½ cup cold unsalted butter, cubed

For the Glaze (optional):

1 cup powdered sugar

2-3 tbsp milk

½ tsp vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Prepare the Cake Batter: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together until well mixed.

      Mix Wet Ingredients: In another bowl, mix the applesauce, vegetable oil, eggs, and vanilla extract until combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not over-mix. Fold in the diced apples gently.
