1 lb (450g) boneless, skinless chicken thighs, sliced thinly

2 tablespoons cornstarch

3 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece fresh ginger, grated

1/2 cup soy sauce (preferably low sodium)

1/4 cup brown sugar

1/4 cup water

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (optional, for heat)

3 green onions, chopped (whites and greens separated)

2 cups cooked jasmine rice (for serving)

Sesame seeds (for garnish)

Instructions
 

Coat the Chicken: In a mixing bowl, toss the sliced chicken thighs with cornstarch until they are evenly coated. This will help the chicken get crispy when cooked.

    Prepare the Sauce: In another bowl, whisk together the soy sauce, brown sugar, water, rice vinegar, sesame oil, and red pepper flakes (if using) until the sugar dissolves completely. Set aside.

      Cook the Chicken: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken in a single layer (you may need to do this in batches) and cook until golden brown and crispy, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

        Sauté Aromatics: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.

          Combine and Simmer: Pour the prepared sauce into the skillet with the garlic and ginger. Bring it to a simmer and let it cook for 2-3 minutes, allowing it to thicken slightly.

            Add Chicken and Green Onions: Return the crispy chicken to the skillet and toss it in the sauce until well coated. Add the chopped white parts of the green onions and cook for an additional 2 minutes.

              Serve: Fluff the cooked jasmine rice and place it on a plate. Top with the Mongolian chicken mixture and garnish with the green onion greens and a sprinkle of sesame seeds.
