Mouthwatering Cajun Shrimp Pasta

12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp Cajun seasoning

1 tbsp olive oil

3 tbsp unsalted butter

4 cloves garlic, minced

1 medium onion, chopped

1 red bell pepper, sliced

1 cup cherry tomatoes, halved

1 cup heavy cream

½ cup grated Parmesan cheese

2 cups fresh spinach

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Season the Shrimp: In a mixing bowl, toss the peeled and deveined shrimp with Cajun seasoning, ensuring they are evenly coated.

      Sauté the Shrimp: In a large skillet over medium-high heat, add the olive oil and 1 tablespoon of butter. Once hot, add the shrimp and sauté for 2-3 minutes on each side until they turn pink and opaque. Remove them from the skillet and set aside.

        Cook the Vegetables: In the same skillet, add the remaining butter. Once melted, add the chopped onions and sliced red bell pepper. Sauté for about 4-5 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

          Add Tomatoes and Cream: Add the halved cherry tomatoes into the skillet. Cook for another 2-3 minutes until they soften. Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese until fully melted and creamy.

            Combine Everything: Return the sautéed shrimp to the skillet and add the fresh spinach, cooking until the spinach wilts down. If the sauce is too thick, gradually add some reserved pasta water to achieve your desired consistency.

              Toss the Pasta: Add the cooked fettuccine to the skillet. Toss everything together until the pasta is coated in the creamy sauce. Season with salt and pepper to taste.
