2 tablespoons olive oil

1 medium onion, finely chopped

2 celery stalks, finely chopped

1 bell pepper (red or green), finely chopped

3 cloves garlic, minced

1 cup corn kernels (fresh, frozen, or canned)

4 cups chicken or seafood stock

1 cup heavy cream

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, and bell pepper. Sauté for about 5-7 minutes until the vegetables soften.

    Add Garlic and Corn: Stir in the minced garlic and corn kernels. Cook for an additional 2-3 minutes until fragrant.

      Create the Base: Add the tomato paste and stir for another minute, allowing it to caramelize slightly. Pour in the chicken or seafood stock and bring to a simmer.

        Season the Bisque: Add the Worcestershire sauce, Cajun seasoning, smoked paprika, and season with salt and pepper. Let the mixture simmer for about 15-20 minutes, allowing the flavors to meld.

          Blend the Soup: Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the mixture or skip this step entirely.
