Ingredients

2 cups puffed brown rice cereal

1/2 cup almond butter (unsweetened)

1/4 cup pure maple syrup or honey

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/3 cup mini dark chocolate chips (optional)

1/4 cup chopped almonds (for topping, optional)

Instructions

Prepare the Pan: Line an 8x8-inch square baking dish with parchment paper, leaving some overhang for easy removal later. Lightly grease the parchment paper with a bit of coconut oil to prevent sticking.

Mix Wet Ingredients: In a large mixing bowl, combine the almond butter, maple syrup (or honey), melted coconut oil, vanilla extract, and sea salt. Stir until smooth and well combined.

Add Dry Ingredients: Gradually add the puffed brown rice cereal to the wet ingredients, stirring gently to coat the cereal evenly. Be careful not to crush the cereal too much as you mix.

Incorporate Chocolate Chips: If using, fold in the mini dark chocolate chips until evenly distributed throughout the mixture.

Press Mixture into Pan: Transfer the mixture to the prepared baking dish. Use a spatula or your hands to press it firmly and evenly into the pan. Make sure it is compact for the squares to hold together once set.

Add Toppings: If desired, sprinkle chopped almonds on top of the mixture, gently pressing them in to adhere.

Refrigerate: Place the baking dish in the refrigerator for at least 1-2 hours or until the mixture has firmed up.

Slice and Serve: Once set, lift the parchment paper out of the dish and place it on a cutting board. Using a sharp knife, cut into squares or bars. Serve immediately or store in an airtight container in the fridge for up to a week.
