For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup sugar

For the cheesecake filling:

2 cups cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the berry topping:

2 cups mixed berries (strawberries, blueberries, raspberries)

2 tablespoons sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 tablespoon water

Instructions
 

Prepare the crust:

    - In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand.

      - Press the mixture firmly into the bottom of a 9x9-inch square baking dish, ensuring an even layer. Set aside.

        Make the cheesecake filling:

          - In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

            - Gradually add the powdered sugar and vanilla extract, continuing to mix until fully incorporated and smooth.

              - In another bowl, whip the heavy cream until stiff peaks form.

                - Gently fold the whipped cream into the cream cheese mixture until no streaks remain. Be careful not to deflate the whipped cream.

                  Assemble the bars:

                    - Spread the cheesecake filling evenly over the prepared crust, smoothing the top with a spatula.

                      - Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until set. Overnight is ideal for a firmer texture.

                        Prepare the berry topping:

                          - In a small saucepan over medium heat, combine the mixed berries, sugar, lemon juice, cornstarch, and water.
