No-Bake Birthday Cake Truffles

1 cup vanilla cake mix (uncooked)

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup rainbow sprinkles (plus extra for coating)

1 cup white chocolate chips

1 tablespoon coconut oil

Instructions
 

In a large mixing bowl, combine the uncooked vanilla cake mix, softened cream cheese, powdered sugar, and vanilla extract. Mix until all ingredients are thoroughly blended and the mixture is smooth.

    Fold in the rainbow sprinkles carefully, ensuring they are evenly distributed throughout the mixture.

      Using your hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into small balls. Place the truffles onto a tray lined with parchment paper.

        Once all the cake mixture is rolled into balls, refrigerate the tray for about 30 minutes to firm them up.

          Meanwhile, melt the white chocolate chips and coconut oil together in a microwave-safe bowl. Heat in 20-30 second intervals, stirring in between, until fully melted and smooth.

            Dip each chilled truffle into the melted white chocolate, ensuring they are fully coated. You can use a fork for this step. Let the excess chocolate drip off.

              Before the chocolate hardens, sprinkle the remaining rainbow sprinkles over the coated truffles for an extra festive touch.

                Place the coated truffles back on the parchment paper and allow them to set in the refrigerator for an additional 15-20 minutes to let the chocolate harden properly.

                  Once the truffles are set, serve them chilled or at room temperature, and watch them disappear at your birthday celebration!
