Ingredients

1 cup Biscoff cookies, crushed

8 oz cream cheese, softened

1/2 cup powdered sugar

1/2 cup Biscoff spread

1 tsp vanilla extract

1/2 cup chocolate chips (milk or dark, depending on your preference)

A pinch of sea salt

Extra crushed Biscoff cookies for rolling (optional)

Instructions

Crush the Cookies: In a food processor, crush the Biscoff cookies into fine crumbs and set aside.

Mix the Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, Biscoff spread, and vanilla extract. Use a hand mixer or spatula to blend until smooth and creamy.

Combine Ingredients: Gradually fold the crushed Biscoff cookies into the cream cheese mixture. Add a pinch of sea salt and mix until everything is well incorporated.

Form the Truffles: Using your hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place the truffles on a baking sheet lined with parchment paper.

Chill the Truffles: Once all the mixture is rolled into balls, refrigerate the tray for about 30 minutes, or until the truffles are firm.

Melt the Chocolate: While the truffles are chilling, melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring between each until completely melted and smooth.

Coat the Truffles: Once the truffles are firm, dip each one into the melted chocolate using a fork. Shake off any excess chocolate and place them back onto the parchment paper. If desired, sprinkle extra crushed Biscoff cookies on top of the chocolate coating before it sets.

Final Chill: Return the coated truffles to the refrigerator for another 15-20 minutes or until the chocolate hardens.

Serve and Enjoy: Your no-bake Biscoff cheesecake truffles are now ready to be served! Enjoy these delightful bites with your friends and family.
