Ingredients

1 cup Graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

16 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups fresh blueberries (plus extra for garnish)

1 tablespoon lemon juice

A pinch of salt

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and slightly crumbly.

Layer the Crust: Spoon a heaping tablespoon of the crumb mixture into the bottom of each jar, pressing down gently to create an even layer. Set aside.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until thoroughly combined.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well incorporated.

Combine with Blueberries: In another bowl, mix the fresh blueberries with lemon juice and a pinch of salt. Fold the blueberry mixture into the cheesecake filling, being careful to maintain some whole blueberries for texture.

Layer the Cheesecake Filling: Spoon the cheesecake filling into the jars on top of the crust, filling each about 3/4 full.

Chill: Cover the jars with lids or plastic wrap and refrigerate for at least 4 hours or overnight to allow the cheesecake to set.

Serve: Before serving, top with additional fresh blueberries and a drizzle of blueberry sauce if desired. Enjoy your deliciously refreshing cheesecake jars!
