1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/4 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/4 cup mini chocolate chips (dark or semi-sweet)

1/4 cup ground flaxseed

1 teaspoon vanilla extract

A pinch of sea salt

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, ground flaxseed, mini chocolate chips, and a pinch of sea salt. Stir until well combined.

    Combine Wet Ingredients: In a separate bowl, whisk together the almond butter, honey or maple syrup, and vanilla extract until smooth.

      Combine Mixtures: Pour the wet mixture into the dry ingredients. Use a spatula or your hands to mix everything together until all ingredients are well combined. The mixture should be sticky but moldable.

        Shape the Bites: Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is used up, placing the energy bites on a plate or baking sheet lined with parchment paper.

          Chill: Once all the bites are shaped, place them in the refrigerator for at least 30 minutes to firm up. This will make them easier to handle and enhance their flavor.
