Ingredients
  

2 cups rolled oats

1 cup almond butter (or peanut butter)

1/2 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1/2 cup dark chocolate chips (plus more for topping)

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: 1/4 cup chopped nuts (almonds, walnuts, or pecans)

Optional: 1/4 cup dried fruits (cranberries or raisins)

Instructions
 

In a large mixing bowl, combine rolled oats, cocoa powder, and salt. Stir well to incorporate all dry ingredients evenly.

    In a separate bowl, combine almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and fully combined.

      Pour the wet mixture over the dry ingredients. Using a spatula, blend everything together until the oats are fully coated and the mixture is thick and sticky.

        If using, fold in the dark chocolate chips, chopped nuts, and dried fruits until evenly distributed throughout the mixture.

          Prepare an 8x8-inch baking pan by lining it with parchment paper for easy removal.

            Transfer the mixture into the prepared pan, pressing down firmly and evenly with your hands or the back of a spatula to ensure it packs tightly.

              For added chocolate goodness, melt a small amount of dark chocolate in the microwave and drizzle over the top of the pressed mixture. You can also sprinkle extra chocolate chips if desired.

                Refrigerate the bars for at least 2 hours to set. Once firm, lift the bars out of the pan using the parchment paper and cut them into squares or rectangles.

                  Store the bars in an airtight container in the refrigerator for up to one week.
