Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 cup powdered sugar

8 oz cream cheese, softened

1 cup creamy peanut butter

1 teaspoon vanilla extract

1 cup heavy whipping cream

¼ cup chocolate chips (optional, for garnish)

Chopped peanuts (optional, for garnish)

Instructions

Prepare the Crust: In a medium bowl, combine graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press this mixture into the bottom of a 9-inch pie dish to form an even layer. Chill in the refrigerator while you prepare the filling.

Make the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes.

Add Peanut Butter and Sugar: Incorporate the peanut butter and powdered sugar. Continue to beat until fully combined and fluffy, about another 2 minutes. Add vanilla extract and mix again.

Whip the Cream: In a separate bowl, use clean beaters to whip the heavy cream until stiff peaks form. This should take about 3-4 minutes of mixing.

Combine Filling and Cream: Gently fold the whipped cream into the peanut butter mixture, doing this in batches. Be careful not to deflate the whipped cream—aim for a light and airy filling.

Assemble the Pie: Pour the filling into the chilled crust, spreading it evenly with a spatula. Smooth the top if desired.

Chill: Cover the pie with plastic wrap and place it in the refrigerator for at least 4 hours, or overnight for best results.

Garnish and Serve: Before serving, garnish the top with chocolate chips and chopped peanuts, if desired. Slice and serve cold.
