1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the cheesecake filling:

8 oz cream cheese, softened

1/2 cup sour cream

1/2 cup powdered sugar

1/2 cup fresh key lime juice (about 4-5 key limes)

Zest of 2 key limes

1 tsp vanilla extract

1 cup heavy whipping cream

For garnish:

Lime slices or wedges

Whipped cream

Additional lime zest (optional)

Instructions
 

Prepare the crust:

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well-coated and resemble wet sand.

      Assemble the crust:

        Spoon about 2 tablespoons of the crust mixture into the bottom of each serving cup. Press down firmly to create an even layer. Place the cups in the fridge to set while you make the filling.

          Make the cheesecake filling:

            In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add in the sour cream, powdered sugar, lime juice, lime zest, and vanilla extract. Mix until thoroughly combined and fluffy.

              Whip the cream:

                In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cheesecake mixture until fully incorporated, taking care not to deflate it.

                  Fill the cups:

                    Remove the cups from the fridge and spoon or pipe the cheesecake filling on top of the crust layer. Smooth the tops with a spatula.

                      Chill:

                        Refrigerate the cheesecake cups for at least 4 hours, or overnight if possible, to set up properly.

                          Serve:
