Ingredients
  

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

For the filling:

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons freshly squeezed orange juice

Zest of 1 large orange

1 cup heavy whipping cream

1 packet (1 oz) unflavored gelatin

¼ cup cold water

For the topping:

Whipped cream, for garnish

Orange slices, for garnish

Grated orange zest, for garnish

Instructions
 

Prepare the crust:

    - In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined and the crumbs are evenly coated.

      - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Chill in the refrigerator while preparing the filling.

        Make the filling:

          - In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

            - Gradually add in the powdered sugar, vanilla extract, orange juice, and orange zest. Mix until fully combined and smooth.

              Dissolve the gelatin:

                - In a small bowl, sprinkle the unflavored gelatin over ¼ cup of cold water. Let it sit for about 5 minutes until it blooms.

                  - After blooming, heat the gelatin mixture in the microwave for about 10-15 seconds until dissolved, but do not let it boil. Allow it to cool slightly.

                    Combine the gelatin:

                      - Slowly pour the cooled gelatin into the cream cheese mixture while mixing on low speed. Ensure it is fully combined.

                        Whip the cream:

                          - In another bowl, whip the heavy whipping cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture using a spatula until well combined, taking care not to deflate the whipped cream.

                            Assemble the cheesecake:

                              - Pour the cheesecake filling over the prepared crust and smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

                                Serve the cheesecake:

                                  - Once set, carefully remove the sides of the springform pan. Slice the cheesecake and top each slice with a dollop of whipped cream, orange slices, and a sprinkle of grated orange zest for garnish.
