24 Oreo cookies, crushed

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

12 Oreo cookies, coarsely chopped (for filling and garnish)

Prepare the crust: In a medium bowl, combine the crushed Oreo cookies and melted butter. Mix until the crumbs are well coated.

    Form the crust: Press the mixture firmly into the bottom of a lined 9x9 inch baking pan to create an even base. Refrigerate while you prepare the filling.

      Make the cheesecake filling: In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until creamy and smooth.

        Add the sweetness: Gradually mix in the powdered sugar and vanilla extract until fully combined and smooth.

          Whip the cream: In a separate bowl, whip the heavy cream on high speed until stiff peaks form.

            Combine mixtures: Gently fold the whipped cream into the cream cheese mixture until well blended. Be careful not to deflate the whipped cream.

              Add Oreo chunks: Fold in the coarsely chopped Oreos, reserving a few for top garnish if desired.

                Assemble the bars: Pour the cheesecake filling over the chilled Oreo crust, smoothing it out evenly with a spatula.

                  Chill: Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until the cheesecake is set.
