1 cup rolled oats

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1 cup finely chopped dried peaches

1/2 cup unsweetened shredded coconut

1/4 cup chia seeds

1 teaspoon vanilla extract

A pinch of salt

Combine the Ingredients: In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), chopped dried peaches, shredded coconut, chia seeds, vanilla extract, and salt. Stir well until everything is evenly mixed. The mixture should be sticky and hold together when pressed.

    Chill the Mixture: Cover the bowl with plastic wrap or a lid and refrigerate for about 15-30 minutes. This will make the mixture easier to handle when forming the bites.

      Form the Bites: Once chilled, remove the mixture from the refrigerator. With your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Place the energy bites on a parchment-lined baking sheet or plate.
