For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

Pinch of salt

For the Cheesecake Filling:

16 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the Strawberry Topping:

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch (optional, for thickening)

Instructions
 

Prepare the Crust:

    - In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and a pinch of salt. Mix until the crumbs are evenly coated with butter.

      - Press the mixture firmly into the bottom of a 9x9 inch baking dish. Use the back of a measuring cup to ensure it’s tightly packed and even.

        - Place the crust in the refrigerator to set while you prepare the cheesecake filling.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.

              - Gradually add in the powdered sugar and vanilla extract, mixing until well combined.

                - In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until well incorporated and fluffy. Be careful not to deflate the whipped cream.

                  Assemble the Cheesecake Bars:

                    - Remove the crust from the refrigerator. Pour the cheesecake filling over the crust and spread it evenly with a spatula.
