Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/4 cup chia seeds

1/4 cup mini chocolate chips (optional)

1/4 cup shredded coconut (unsweetened)

1/2 teaspoon vanilla extract

A pinch of sea salt

1/4 cup dried fruit (e.g., cranberries, apricots, or raisins), chopped

Instructions
 

In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), chia seeds, and sea salt.

    Add in the shredded coconut, vanilla extract, and your choice of dried fruit. Stir until all the ingredients are well incorporated.

      If using, gently fold in the mini chocolate chips to the mixture.

        Once everything is mixed thoroughly, refrigerate the mixture for about 30 minutes to help it firm up slightly.

          After chilling, remove the mixture from the refrigerator. Using your hands, scoop out tablespoon-sized amounts of the mixture and roll them into bite-sized balls.

            Place the energy bites on a parchment-lined baking sheet or a plate.

              Store the bites in an airtight container in the refrigerator for up to one week, or freeze them for longer storage.
