1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/4 teaspoon salt

1 large egg

1 cup milk (or a non-dairy alternative)

1/4 cup melted butter (plus extra for greasing)

1/2 cup Nutella

1 teaspoon vanilla extract

Powdered sugar (for dusting)

Fresh berries (optional, for serving)

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    Combine Wet Ingredients: In another bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.

      Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; small lumps are okay.

        Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin with a little melted butter or cooking spray.

          Fill Muffin Tin: Pour about a tablespoon of the pancake batter into each cavity of the muffin tin.

            Add Nutella: Using a teaspoon, add a dollop of Nutella into the center of each pancake batter-filled cavity. Cover with a small amount of additional batter to seal the Nutella inside.

              Bake: Place the muffin tin in the preheated oven and bake for 10-12 minutes, or until the pancake bites are golden brown and a toothpick inserted comes out clean.

                Cool and Serve: Allow the pancake bites to cool in the tin for about 5 minutes, then carefully remove them. Dust with powdered sugar and serve warm with fresh berries if desired.
