Ingredients

2 cups rolled oats

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup chopped walnuts or pecans

1/3 cup brown sugar (or maple syrup for a healthier option)

2 teaspoons ground cinnamon

1 teaspoon vanilla extract

1/2 teaspoon salt

2 cups milk (dairy or non-dairy alternative)

1 large egg

2 tablespoons melted coconut oil or butter

Optional: 1/4 cup raisins or dried cranberries

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish with a bit of coconut oil or butter.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, brown sugar (or maple syrup), ground cinnamon, and salt. Stir until well mixed.

Prepare the Apples: Add the diced apples and optional dried fruits (if using) to the dry mixture. Gently fold to evenly distribute.

Wet Ingredients: In another bowl, whisk together the milk, egg, melted coconut oil (or butter), and vanilla extract until well blended.

Combine Mixtures: Pour the wet mixture into the dry mixture. Stir thoroughly until all the oats are moistened and the apples are evenly distributed.

Transfer to Baking Dish: Pour the oatmeal mixture into your prepared baking dish, spreading it evenly out to ensure even baking.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the edges are slightly crispy.

Cool and Serve: Let the oatmeal bake cool for about 10 minutes before serving. This dish can be enjoyed warm as is, or topped with a dollop of yogurt or a splash of milk.

Storing Leftovers: If you have any leftovers, store them in an airtight container in the fridge for up to 4 days. Reheat in the microwave or oven before enjoying again.
