Oatmeal Apple Cake

1 ½ cups rolled oats

1 ½ cups apple cider (or water)

1 cup all-purpose flour

1 cup brown sugar, packed

½ cup granulated sugar

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

2 medium apples, peeled and diced (preferably Granny Smith or Honeycrisp)

½ cup chopped nuts (walnuts or pecans, optional)

½ cup raisins (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

    Prepare Oats: In a medium bowl, combine the rolled oats and apple cider. Let this mixture sit for about 15 minutes, allowing the oats to absorb some liquid and soften.

      Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, brown sugar, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until combined.

        Combine Wet Ingredients: In another bowl, whisk together the melted butter, eggs, and vanilla extract. Gently stir in the soaked oat mixture.

          Incorporate Combos: Add the wet ingredients to the dry ingredients and fold gently until just combined. Be careful not to overmix.
