For the Cookies:

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

3 cups old-fashioned rolled oats

1/2 cup raisins or chocolate chips (optional)

For the Cream Filling:

1/2 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (as needed for consistency)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

      Prepare the Cookie Dough:

        In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand mixer or stand mixer until the mixture is light and fluffy, about 3-4 minutes.

          Add Eggs and Vanilla:

            Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and combine thoroughly.

              Combine Dry Ingredients:

                In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Gradually add the dry mixture to the wet mixture, stirring until just combined.

                  Stir in Oats:

                    Fold in the rolled oats and raisins/chocolate chips (if using). The dough will be thick but should hold together well.

                      Shape the Cookies:

                        Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

                          Bake:

                            Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers may look slightly underbaked; they will firm up as they cool.

                              Cool the Cookies:

                                Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
