2 cups granulated sugar

1/2 cup unsweetened cocoa powder

1/2 cup whole milk

1/4 cup unsalted butter

1 teaspoon vanilla extract

1/2 cup chopped nuts (walnuts or pecans, optional)

Begin by greasing an 8-inch square baking pan with butter or lining it with parchment paper for easy removal later.

    In a medium-sized saucepan, combine the sugar, cocoa powder, and salt. Stir to combine.

      Pour in the whole milk and add the unsalted butter.

        Place the saucepan over medium heat and stir continuously until the mixture comes to a full boil.

          Once boiling, stop stirring and let it boil undisturbed for about 5 minutes. Use a candy thermometer to monitor the temperature; you want it to reach 234°F (112°C).

            Remove from heat and quickly stir in the vanilla extract. If you're adding nuts, fold them in at this point.

              Allow the fudge to cool for about 10 minutes at room temperature. Then, using a wooden spoon or spatula, beat the mixture for about 5 minutes, or until it becomes thick and loses its shine.

                Pour the fudge into the prepared baking pan and spread it evenly using a spatula.

                  Let the fudge cool completely at room temperature, then refrigerate for at least 1 hour to firm up.
