1 cup quinoa, rinsed

2 cups vegetable broth

2 cups fresh broccoli florets

1 cup shredded cheddar cheese (plus extra for topping)

1 cup milk (or plant-based alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper, to taste

1 tablespoon olive oil

½ cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Quinoa: In a medium saucepan, add the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to medium-low, cover, and simmer for about 15 minutes, or until the liquid is fully absorbed. Remove from heat and fluff with a fork.

      Sauté Broccoli: In a large oven-safe skillet, heat olive oil over medium heat. Add the broccoli florets and sauté for about 3-4 minutes until they begin to soften.

        Combine Ingredients: Add the cooked quinoa to the skillet with the broccoli. Stir in the milk, 1 cup of cheddar cheese, garlic powder, onion powder, paprika, and season with salt and pepper. Mix everything until well combined.

          Prepare for Baking: If you like a crunchy topping, mix the breadcrumbs with a little olive oil and sprinkle over the casserole. Add an extra handful of cheddar cheese on top.

            Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and the top is golden brown.
