One-Pan Cheesy Broccoli and Rice Casserole

1 cup uncooked brown rice

2 cups vegetable broth (or chicken broth)

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 can (10.5 oz) cream of mushroom soup (or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

1 tablespoon olive oil

Optional: 1/2 cup bread crumbs for topping

Optional: Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Rice: In a 9x13 inch baking dish or a large oven-safe skillet, combine uncooked brown rice and vegetable broth. Stir well to ensure the rice is evenly distributed.

      Prepare the Broccoli: Add the fresh broccoli florets directly to the rice mixture. Make sure the broccoli is spread out evenly across the dish.

        Mix in the Cream of Mushroom Soup: In a bowl, mix together the cream of mushroom soup, garlic powder, onion powder, paprika, salt, and pepper. Pour this mixture over the rice and broccoli, and stir until everything is well combined.

          Add the Cheeses: Sprinkle the shredded sharp cheddar and mozzarella cheese over the top of the casserole. Use a spatula to gently fold a portion of the cheese into the mixture, leaving some cheese on top for a nice, melted crust.

            Optional Bread Crumb Topping: If using, sprinkle the bread crumbs evenly over the cheese layer for added crunch.

              Bake: Drizzle the olive oil over the top (helps the bread crumbs to crisp up, if using) and cover the casserole with aluminum foil. Bake in the preheated oven for 30 minutes.

                Uncover and Finish Baking: After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and has started to brown slightly. If you like a crispy topping, you can broil it for the last 2-3 minutes, but keep a close eye to prevent burning!

                  Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley if desired, then serve warm.
