2 cups vegetable broth

1 medium zucchini, diced

1 medium bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup corn kernels (fresh or frozen)

1 red onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 1/2 cups shredded cheddar cheese (or a mix of your favorite cheeses)

Fresh parsley, for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large oven-safe skillet or a medium casserole dish, heat a tablespoon of olive oil over medium heat. Add the chopped red onion and sauté for about 2-3 minutes until translucent. Stir in the minced garlic and sauté for an additional 30 seconds until fragrant.

      Add Vegetables: Toss in the diced zucchini, bell pepper, and corn kernels. Sauté for another 3-4 minutes until the veggies are slightly softened.

        Incorporate Spinach and Tomatoes: Add the halved cherry tomatoes and chopped spinach. Stir until the spinach has wilted.

          Add Rice and Seasoning: Pour in the rinsed rice, vegetable broth, dried oregano, basil, smoked paprika, salt, and pepper. Stir everything to combine well, making sure the rice is evenly distributed among the veggies.
