1 cup orzo pasta

3 cups vegetable or chicken broth

3 tablespoons olive oil

4 cloves garlic, minced

1 small onion, diced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Sauté Aromatics: In a large skillet or pan, heat the olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes, or until fragrant.

    Toast Orzo: Stir in the orzo and continue to cook for about 2-3 minutes, until slightly golden and toasted, stirring frequently to prevent burning.

      Add Liquid and Seasoning: Pour in the vegetable or chicken broth, and add the dried oregano, red pepper flakes (if using), salt, and pepper. Bring the mixture to a gentle boil, then reduce the heat to low and cover the pan. Allow to simmer for about 10-12 minutes or until the orzo is al dente, stirring occasionally.

        Incorporate Vegetables: Once the orzo has absorbed most of the liquid, add the halved cherry tomatoes and baby spinach. Stir to combine and cook for another 2-3 minutes until the spinach wilts and the tomatoes are softened.

          Cheesy Goodness: Remove the pan from heat and stir in the grated Parmesan cheese until melted and well combined. Taste and adjust seasoning if necessary.
