6 Italian sausages (mild or spicy, depending on preference)

1.5 lbs (about 6 medium) baby potatoes, halved

1 red bell pepper, diced

1 yellow bell pepper, diced

1 large red onion, quartered

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

½ teaspoon red pepper flakes (optional for extra heat)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

Fresh basil, for garnish (optional)

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and prepare a large baking dish or sheet pan.

    Prepare the Vegetables: In a large bowl, add the halved baby potatoes, diced red and yellow bell peppers, and quartered red onion. Drizzle with olive oil and sprinkle with dried oregano, thyme, paprika, red pepper flakes (if using), salt, and pepper. Toss well to coat the vegetables evenly.

      Arrange in the Pan: Spread the seasoned vegetables in an even layer in the prepared baking dish or on the sheet pan.

        Add Sausages: Nestle the Italian sausages amongst the vegetables, ensuring they are evenly distributed.
