One-Pan Lemon Garlic Shrimp & Rice – Easy & Delicious!

1 lb large shrimp, peeled and deveined

1 cup long-grain white rice

3 cups low-sodium chicken or vegetable broth

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup cherry tomatoes, halved

1/2 cup frozen peas (optional)

Juice and zest of 1 lemon

1 teaspoon paprika

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Start by peeling and deveining the shrimp if not already done. Rinse the rice under cold water until the water runs clear to remove excess starch.

    Sauté the Aromatics: In a large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook another 1 minute until fragrant.

      Cook the Rice: Add the rinsed rice to the pan and toast it for about 2 minutes, stirring constantly. This will add a nice nutty flavor to the rice.

        Add Broth & Seasoning: Pour in the chicken or vegetable broth, lemon juice, and stir in the lemon zest, paprika, oregano, red pepper flakes, salt, and pepper. Bring the mixture to a gentle boil.

          Simmer: Reduce the heat to low, cover the pan, and let it simmer for about 15 minutes. After 15 minutes, remove the lid, stir in the cherry tomatoes and peas (if using), and make sure there's enough liquid left. If it’s too dry, add a splash more broth or water.

            Add the Shrimp: Place the shrimp on top of the rice mixture, cover the pan again, and cook for an additional 5-6 minutes or until the shrimp are pink and opaque.

              Finish and Serve: Turn off the heat and let the pan sit covered for another 5 minutes. Garnish with chopped fresh parsley before serving. Adjust seasoning to taste and enjoy this delightful one-pan meal!
