1 pound Italian sausage (mild or spicy, according to preference)

1 pound baby potatoes (halved)

1 red bell pepper (sliced)

1 yellow bell pepper (sliced)

1 red onion (sliced)

3 cloves garlic (minced)

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley (chopped, for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large mixing bowl, combine halved baby potatoes, sliced bell peppers, sliced onion, and minced garlic. Drizzle with olive oil and balsamic vinegar, then sprinkle with oregano, smoked paprika, salt, and pepper. Toss everything together until the vegetables are evenly coated.

      Arrange in a Pan: Spread the vegetable mixture in a single layer on a large rimmed baking sheet. Nestle the sausages among the vegetables, giving everything room to roast and caramelize.
