1 lb (450g) Italian sausage (mild or spicy, based on preference)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 medium red onion, chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley or basil for garnish

Prep the Ingredients: Start by slicing the bell peppers, dicing the zucchini, halving the cherry tomatoes, and chopping the red onion. Mince the garlic and set everything aside.

    Cook the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until browned and cooked through. Remove the sausage from the skillet and set it aside, leaving any rendered fat in the pan.

      Sauté the Vegetables: In the same skillet, add the chopped red onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.

        Add the Remaining Veggies: Stir in the sliced bell peppers and zucchini. Cook for another 5 minutes until they start to soften.

          Combine Everything: Return the cooked sausage back into the skillet with the veggies. Add in the halved cherry tomatoes, dried oregano, smoked paprika, salt, and pepper. Mix everything well.

            Simmer: Cover the skillet and let it cook for an additional 5 minutes, stirring occasionally, until the tomatoes soften, and the flavors meld together.

              Garnish and Serve: Remove the skillet from heat. Garnish with freshly chopped parsley or basil. Serve immediately, either on its own or over rice or quinoa.
