One-Pot Cajun Chicken Alfredo

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons Cajun seasoning (adjust to taste)

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, chopped

1 bell pepper (red or green), diced

2 cups chicken broth

8 ounces (225g) fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup fresh spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Chicken: In a bowl, toss the chicken pieces with Cajun seasoning until well coated. Set aside.

    Sauté Aromatics: In a large pot or dutch oven, heat olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until softened (about 3-4 minutes). Add minced garlic and sauté for an additional minute until fragrant.

      Cook the Chicken: Push the vegetables to one side of the pot and add the seasoned chicken. Cook until browned on all sides, about 5-7 minutes.

        Add Pasta and Broth: Pour in the chicken broth and bring to a simmer. Add the fettuccine pasta, ensuring it's submerged in the liquid. Stir occasionally to prevent sticking. Cover and cook for 10-12 minutes, or until the pasta is cooked al dente, stirring occasionally.

          Create the Sauce: Reduce the heat to low. Stir in the heavy cream and grated Parmesan cheese until well combined and creamy. If too thick, a splash of additional chicken broth can be added.
