2 cups elbow macaroni

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

3 cloves garlic, minced

2 cups beef broth

1 cup milk

1 (15 oz) can diced tomatoes with green chilies (undrained)

1 packet taco seasoning (about 1 oz)

1 cup shredded cheddar cheese

1/2 cup sour cream

1 cup corn (fresh, frozen, or canned)

Salt and pepper, to taste

Fresh cilantro or green onions, for garnish

Instructions
 

Brown the Meat: In a large pot over medium heat, add the ground beef and diced onion. Cook until the meat is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.

    Sauté Garlic: Add the minced garlic to the pot and sauté for an additional minute until fragrant.

      Add Liquids and Seasoning: Pour in the beef broth, milk, diced tomatoes (with juices), and taco seasoning. Stir to combine all ingredients.

        Incorporate the Pasta: Add the elbow macaroni to the pot. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 8-10 minutes, stirring occasionally, until the pasta is cooked al dente and most of the liquid is absorbed.

          Mix in Corn and Creaminess: Stir in the corn, sour cream, and shredded cheddar cheese. Mix until the cheese is melted and creamy. Season with salt and pepper to taste.

            Serve: Once everything is well combined and heated through, remove from heat. Serve hot, garnished with fresh cilantro or green onions for a pop of color and flavor.
