Ingredients

12 oz spaghetti or linguine

4 cups vegetable broth (or chicken broth)

1 medium onion, finely chopped

4 cloves garlic, minced

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, roughly chopped

1 lemon (zest and juice)

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

2 tablespoons olive oil

1/2 cup grated Parmesan cheese (plus extra for serving)

Fresh basil leaves, for garnish

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

Combine Ingredients: Add the uncooked spaghetti to the pot along with the vegetable broth, halved cherry tomatoes, the zest of the lemon, and a squeeze of lemon juice. Season with salt and black pepper. Stir to combine all ingredients.

Cook the Pasta: Bring the mixture to a gentle boil. Reduce the heat to low and cover the pot. Let the pasta cook for about 9-12 minutes, or until al dente, stirring occasionally to prevent sticking.

Add Flavor and Finish: Once the pasta is cooked to your liking, remove the pot from heat. Stir in the chopped basil and grated Parmesan cheese, adjusting the seasoning with more salt and pepper as needed. If the pasta seems too dry, you can add a splash more of vegetable broth or water.

Serve: Plate the pasta and garnish with additional basil leaves, a sprinkle of grated Parmesan cheese, and an extra squeeze of lemon juice if desired. Enjoy your delicious and refreshing one-pot pasta!
