1 lb Italian sausage (sweet or spicy, casings removed)

1 large bell pepper (any color, diced)

1 medium onion (diced)

2 cups baby potatoes (halved or quartered)

1 cup zucchini (diced)

2 cloves garlic (minced)

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley (chopped for garnish)

Optional: 4 eggs (for frying on top)

Cook the Sausage: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and break it up with a spatula. Cook until browned, about 5-7 minutes. Once cooked, remove the sausage from the skillet and set aside, leaving the drippings in the pan.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and bell pepper; sauté for 3-4 minutes until they start to soften. Stir in the minced garlic and cook for an additional minute.

      Add Potatoes: Toss in the halved or quartered baby potatoes, oregano, smoked paprika, salt, and pepper. Stir everything together and cover the skillet. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are fork-tender. You can add a splash of water to create steam if necessary.

        Incorporate Zucchini: Once the potatoes are tender, stir in the zucchini and the browned sausage. Cook for an additional 5 minutes until the zucchini is tender. Adjust seasoning with salt and pepper as desired.

          Optional Eggs: If you want to add eggs, create small wells in the hash mixture and crack an egg into each well. Cover the skillet and let the eggs cook until the whites are set (about 5-6 minutes) while the yolks are still runny, or cook them to your desired doneness.
