Ingredients

8 oz. fettuccine or spaghetti

1 lb sirloin steak, cut into bite-sized pieces

Salt and black pepper, to taste

2 tbsp olive oil

4 cloves garlic, minced

1 tsp smoked paprika

1 tsp brown sugar

½ cup beef broth

½ cup heavy cream

½ cup grated Parmesan cheese

2 cups baby spinach

2 tbsp butter

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for added heat)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Drain, reserving about 1 cup of pasta water, and set aside.

Season the Steak: While the pasta is cooking, season the sirloin steak pieces generously with salt and black pepper.

Sear the Steak: In a large skillet over medium-high heat, add the olive oil. Once hot, add the seasoned steak pieces. Sear for about 3-4 minutes until browned on all sides. Remove the steak from the skillet and set aside.

Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic, smoked paprika, and brown sugar. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

Deglaze the Skillet: Pour in the beef broth, scraping any browned bits from the bottom of the skillet. Bring to a simmer and let it reduce slightly for about 2 minutes.

Creamy Mixture: Lower the heat and stir in the heavy cream, followed by the grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.

Combine Ingredients: Add the cooked pasta and baby spinach to the skillet, tossing to combine. Return the seared steak to the skillet as well. Stir gently, adding reserved pasta water a bit at a time until the sauce reaches your desired consistency.

Finish with Garlic Butter: Stir in the butter until melted and combined. Taste and adjust seasoning with salt, pepper, or red pepper flakes, if desired.

Serve: Remove from heat and garnish with chopped parsley. Serve hot and enjoy your Sweet & Smoky Garlic Butter Steak Pasta!
