Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons sugar

16 oz cream cheese, softened

1/2 cup powdered sugar

1/2 cup heavy whipping cream

1/2 cup orange juice (freshly squeezed for best flavor)

Zest of 1 orange

1 teaspoon vanilla extract

1 tablespoon unflavored gelatin (optional, for firmer texture)

2 tablespoons warm water (if using gelatin)

Orange slices and whipped cream for garnish (optional)

Instructions

Prepare Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture into the bottom of 12 cupcake liners placed in a muffin tin, forming an even layer. Set aside.

Mix Cream Cheese Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and continue to mix until combined.

Incorporate Flavors: Add the heavy whipping cream, orange juice, orange zest, and vanilla extract to the cream cheese mixture. Mix on low speed until everything is well incorporated. If you're using gelatin for a firmer texture, dissolve it in warm water and gently mix it into the batter.

Fill the Cups: Spoon the cream cheese mixture into each cupcake liner over the crust, filling them almost to the top. Smooth the tops with a spatula.

Chill: Place the muffin tin in the refrigerator for at least 4 hours or until the cheesecakes are set.

Serve: Once set, carefully remove the mini cheesecakes from the muffin tin. Garnish with a dollop of whipped cream and a slice of orange on top, if desired.

Enjoy: Keep leftovers in an airtight container in the fridge for up to a week!
