6 medium russet potatoes, peeled and diced

6 cups chicken broth

1 cup heavy cream

4 tbsp unsalted butter

1 medium onion, diced

2 cloves garlic, minced

1 tsp dried thyme

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup cooked and crumbled bacon

¼ cup chopped green onions

½ cup sour cream (for serving)

Instructions
 

In a large pot over medium heat, melt the butter. Add the diced onion and garlic, cooking until the onion is translucent (about 5 minutes).

    Stir in the diced potatoes and season with salt, pepper, and thyme. Pour in the chicken broth and bring to a boil.

      Once boiling, reduce the heat to low and simmer for about 20-25 minutes, or until the potatoes are tender.

        Using a potato masher or an immersion blender, mash or blend the potatoes to your desired consistency (smooth or chunky).

          Stir in the heavy cream and let it simmer for an additional 5 minutes to heat through.

            Adjust seasoning with more salt and pepper if needed.

              Serve the soup hot, topped with shredded cheddar cheese, crumbled bacon, chopped green onions, and a dollop of sour cream.
