Oven-Baked Buffalo Cauliflower Bites

1 medium cauliflower head, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup water (or plant-based milk for a creamier texture)

1/2 cup buffalo sauce (adjust to taste)

2 tbsp olive oil

Optional: 1/4 cup ranch or blue cheese dressing for dipping

Optional: Chopped green onions or parsley for garnish

Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil until well-coated.

      Make the Batter: In another bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and water (or plant-based milk). Whisk until you have a smooth batter.

        Coat the Cauliflower: Dip each cauliflower floret into the batter, making sure they are evenly coated. Allow any excess batter to drip off.

          Bake the Cauliflower: Place the battered cauliflower on the prepared baking sheet in a single layer. Bake for 20 minutes, or until the florets are golden and crispy.

            Add Buffalo Sauce: Remove from the oven, and immediately drizzle the cauliflower with buffalo sauce, tossing them gently to coat. Return to the oven and bake for another 10-15 minutes until they're crispy and the sauce has caramelized slightly.
